Spring menus: What’s new at 10 restaurants

“Ramps are one of my all-time favorite vegetables in the whole world,” says Robbie Felice, chef-partner at Viaggio Ristorante in Wayne. Expect to see ramps in everything at Viaggio this spring – charred ramps with olive oil and burrata, pasta with ramps, charred ramp pesto, steak with ramps, etc. “I’m obsessed.”
Viaggio’s forthcoming spring menu will also feature lots of asparagus, peas, morels, stinging nettles and spring lettuces. “Italian food is super, super simple,” he explains, “you just get your hands on nicest ingredients and present them in a simple way.” Felice is working with farm-to-table supplier Harvest Drop to get those nice ingredients, all from local purveyors.
